Turns out, Gordon Ramsay’s minted melon feta salad works with tomatoes, too. I had some leftover tomatoes from tomato-basil-mozzarella kebabs and added those–plus some other leftovers I had on hand that I can’t recall–into the leftover salad, and it was good! And stretched out the salad a little, which was nice too.

When we accidentally bought 4 oz. of goat cheese curds instead of feta (for salad), we weren’t sure what to do with them. The BF dislikes goat cheese and while I like it just fine I didn’t have that much salad to use it on. Fortunately, the BF suggested that it might, because it was soft and crumbly like panela cheese and cotija, go as well as they do with jalapenos. That was a great idea, and for several breakfasts in a row I got to have these delicious scrambled eggs. Instructions are below! (more…)
TSC Bacon + Bell Pepper on Toast and Gordon Ramsay’s Tomato Kebabs is an incredible breakfast combo.
Came across some honey goat-cheese gouda one day and bought it because I was intrigued, but wasn’t sure what to do with it. Putting it on ritz crackers with strawberry slices was perfect, and sort of like a cheese-and-cracker version of strawberry shortcake.
The bacon + yellow bell pepper on toast meal was so tasty that I made it again the next day, that time accompanied by tomato-mozzarella kebabs. These are a simple yet fancy-feeling and very tasty appetizer, side dish, accompaniment to drinks, etc. You can also make them with feta (like Gordon Ramsay does in Fast Food; he also has the great idea of drizzling balsamic vinegar over them just before serving). Before eating this salad, I didn’t know I liked asparagus, or spinach, or blue cheese (*especially* not blue cheese) so much, but apparently I do. It’s just really, really good, and hearty enough to be a dinner. The recipe is from (more…)
Today I have for you another bagel sandwich (see previous bagel sandwich post, from way back). This one has bacon, tomato, roasted yellow bell pepper, avocado, and of course cream cheese. It also has toothpicks holding it all together! (I cut it into halves, then remove the toothpicks as I eat. If you’re worried about eating a toothpick doing that, you should at least use them during the cutting, since it makes a huge difference.)
