We chopped up way too many veggies for our panko tempura, so we made good use of them the next day as a side to go with gyoza and rice. The veggies were carrots, zucchini, red bell pepper, and broccoli. We steamed them and flavored them with, I think, rice wine vinegar, and a little soy.
It sounds cliche but we really do feel better when we fit a lot of vegetables into our meals. My only problem is that I still can’t get over what a *giant* pile of veggies and/or salad even a small person like me can easily eat. The BF frequently has to remind me how ridiculously few calories they have.
