It’s surprising how good a simple sandwich-based lunch can be when you haven’t had it in a while. This lunch of a sandwich + chips + applesauce (the sandwich is a fried chicken patty with lettuce, tomato and mustard and the chips are BBQ Pop Chips) was a throwback to my childhood—in a good way!—but I made it feel a little more “adult” by including baked asparagus, which is delicious.
To make it, I create a sort of boat/pouch out of foil and put the trimmed asparagus in it, along with some EVOO and/or butter, lemon juice (or you can add the lemon juice at the end. or not at all), ground black pepper and ground sea salt. Then I wrap the foil over it and bake it for, I dunno, 1o-15 minutes at about 375°F. (My old oven was wonky so my guesses on timing and temperature may be too.) If you’re feeling impatient or fidgety, sautéing it works too. Add more salt and pepper, if needed, and serve!
