Tomato & Basil Salad


 

This simple but delicious salad makes an excellent appetizer. It’s easy to make on the spot with just two or three tomatoes, and the dressing is so good that, for a long time, it was our go-to salad dressing for all sorts of salads. The recipe (which is actually called “Mixed Tomato Salad”) is from Gordon Ramsay’s Fast Foods—which you should buy right now–and calls for:

  • 1 and 1/3 lb. mixed vine-ripened tomatoes (e.g., red and yellow cherry, plum, romano, green zebra)
  • a handful of basil leaves, torn (note: we do a much higher basil : tomato ratio, ourselves)
  • dressing: 1 tsp Dijon (we do more), 1 tbsp red wine vinegar, 1/2 tsp superfine sugar (regular sugar is fine too), 4 tbsp EVOO, sea salt & black pepper to taste
