Mashed potatoes are *kind of* a huge deal in my family… I usually make them plain, like my mom does (potatoes, milk, and butter, but keeping them firmer than most people do). Occasionally, though, I saute bits of onion to mix in. You can saute the onion in straight-up butter and not feel guilty because you need to put butter in the potatoes anyway, and can use less because of the butter in the onions. Here I also tossed in (at the every end, so they don’t wilt as much) some fresh chive bits. Mashed potatoes are an amazing comfort food.
