We came to have too many carrots, so I googled carrot salad recipes and picked the first good-sounding one I saw, from onceuponachef. (Another one had a dressing made of mayonnaise and milk. Gross!) We didn’t have the fresh shallots or fresh parsley the recipe calls for, but I did toss in some freshly chopped chives. I had dried parsley, but that would have made it worse, not better.
The verdict? The dressing was great! Especially the hint of honey. Overall, it worked well even while missing some key ingredients, and I can see this making an excellent side dish. What meal would you eat this salad with? Or what you would do if you had too many carrots?
